AUSSIE LAMINGTONS

YIELDS: 8 Servings

PREP TIME: 15 minutes

COOK TIME: 30 minutes

 

INGREDIENTS:

100 g plus 1 tablespoon butter, softened at room temperature

100 g white sugar

● 2 eggs 

 1 teaspoon vanilla extract

 100 g all-purpose flour

 3½ cups icing sugar

 ¼ cup cocoa powder

½ cup boiling water

 2 cups desiccated coconut

DIRECTIONS:

1. PREHEAT your air fryer to 180 oC.

2. GREASE a baking dish that will fit inside your air fryer.

3. CREAM 100 g butter with the white sugar until light in colour and fluffy.

4. MIX in the eggs and vanilla.

5. ADD flour and combine using a wooden spoon, being careful not to over-mix the batter.

6. TRANSFER to your prepared dish and bake in your air fryer for 15 minutes.

7. LOWER the heat to 170 oC.

8. BAKE for a further 10 minutes or until a skewer inserted into the cake comes out clean.

9. ALLOW your cake to cool completely on a wire rack.

10. MEANWHILE, make the icing. Mix icing sugar, cocoa powder, boiling water, and 1 tablespoon butter until smooth.

11. CUT the cake into 8 cm by 4 cm chunks.

12. ADD coconut to a shallow bowl.

13. DIP each cake chunk into the icing and then roll in the coconut.

14. ALLOW setting on a wire rack. Repeat with remaining chunks and serve.

MAKE IT YOUR OWN: Need jam in your lamingtons? Cut cake chunks in half down the centre, spread a layer of jam, and sandwich the cake back together before dipping in the icing.
