HEALTHY CHICKEN TIKKA

YIELDS: 2 Servings

PREP TIME: 5 minutes (allow at least 1 hour for marinating)

COOK TIME: 20 minutes

INGREDIENTS:    

300 g chicken breasts

2 red capsicums, roughly chopped

1 white onion, thinly sliced

3 tablespoons tikka curry powder

1 tablespoon olive oil

DIRECTIONS:

1. PREHEAT your air fryer to 180 oC.

2. CUT the chicken breasts into bite-sized chunks.

3. COMBINE the onion, pepper, tikka powder and olive oil in a medium-sized bowl.

4. ADD the chicken, stirring to coat well.

5. COVER the bowl with glad wrap and refrigerate.

6. ALLOW to marinate for a minimum of 1 hour, but ideally overnight.

7. REMOVE chicken pieces from the marinade and place them in the air fryer basket.

8. COOK for 22 minutes.

9. SHAKE occasionally to ensure chicken pieces are evenly browned.

10. SERVE immediately with warm rice and naan.

MAKE IT YOUR OWN: Like things a little hotter? Add a teaspoon of chilli powder to the tikka powder.
