AUSTRALIAN CORN FRITTERS
YIELDS: 4 Servings
PREP TIME: 5 minutes
COOK TIME: 12 minutes
INGREDIENTS:
● 1 cup Australian sweetcorn kernels, fresh or frozen
● ½ cup white onion, finely chopped
● 2 zucchini, grated and with excess water squeezed out
● 1 tablespoon garlic, minced
● 1 egg 2 tablespoons flour
● ¼ teaspoon paprika
● 1-2 teaspoon olive oil
● Salt and pepper, to season
DIRECTIONS:
1. PREHEAT your air fryer to 180 oC.
2. COMBINE the sweetcorn, onion, zucchini, garlic, egg, flour, paprika and seasoning in a medium mixing bowl. Mix well.
3. SHAPE into round patties using your hands and approximately 2 tablespoons of batter for each one.
4. LIGHTLY brush the top of the patties with a little olive oil.
5. PLACE patties in a single layer in the air fryer, making sure they do not touch. 6. FRY for 8 minutes.
7. TURN and then cook for a further 4 minutes until both sides are brown and crispy.
8. SERVE warm.
MAKE IT YOUR OWN: Serve with tahini sauce or make your own dip by combining ½ cup plain yoghurt with 1 teaspoon tahini and a pinch of salt.
